- 30g oats
- 4 Medjool dates, pitted
- 50g ground almonds
- 2 tablespoons almond butter
- 1 teaspoon ground cinnamon
- 25g dried apple slices
- Pinch of salt
- 1 medium apple, grated
- Extra cinnamon for dusting
Instructions
- In a food processor, blitz 30g of oats with the pitted dates, ground almonds, almond butter, cinnamon, dried apple slices, and a pinch of salt until the mixture is roughly chopped and starting to stick together.
- Grate in the apple, including the skin, and pulse in the remaining oats until everything is well combined.
- Shape the mixture into 10 balls and dust them lightly with cinnamon.
- Chill the energy balls in the fridge for 30 minutes to help them firm up.
