Ingredients

  • 30g oats
  • 4 Medjool dates, pitted
  • 50g ground almonds
  • 2 tablespoons almond butter
  • 1 teaspoon ground cinnamon
  • 25g dried apple slices
  • Pinch of salt
  • 1 medium apple, grated
  • Extra cinnamon for dusting

Instructions

  • In a food processor, blitz 30g of oats with the pitted dates, ground almonds, almond butter, cinnamon, dried apple slices, and a pinch of salt until the mixture is roughly chopped and starting to stick together.
  • Grate in the apple, including the skin, and pulse in the remaining oats until everything is well combined.
  • Shape the mixture into 10 balls and dust them lightly with cinnamon.
  • Chill the energy balls in the fridge for 30 minutes to help them firm up.
  • You can store the energy balls in an airtight container in the fridge for up to five days.
